Ingredients
For The Salad
1 1/2 cups Uncooked quinoa
2 1/2 cups Cups water
3/4 cup Feta cheese
1 1/2 cups Cherry tomatoes, chopped
1/2 Red onion, diced
1 Red bell pepper, diced and seeded
1 Cucumber, diced and seeded
3/4 cup Kalamata olives, diced
1 cup Parsely, loosely packed and chopped
For the Dressing
1/4 cup Extra virgin olive oil
1/4 cup Red wine vinegar
1/2 tablespoon Maple syrup
1/2 tablespoon Dried oregano
3/4 teaspoon Salt
1/4 teaspoon Ground black pepper
Instructions
- Place quinoa and water in medium pot, bring to a boil then reduce heat to low and simmer covered for 15 minutes.
- Fluff cooked quinoa with a fork.
- Whisk together all dressing ingredients in a bowl, set aside.
- Place cucumber, red pepper, red onion, tomatoes, feta, olives, and parsley in a large bowl.
- Add cooked quinoa to bowl and stir.
- Pour dressing over salad and toss to combine.
- Serve immediately.
